Mexican Rice and Chicken

Ingredients:
1 Large Cooked Chicken Breast
3/4 Cup Dry Jasmine Rice
1/2 Onion Diced
1-2 Tsp Garlic Powder (to taste)
1-2 Tsp Black Pepper (to taste)
3 Tsp Chilli Powder (to taste)
8-12 Oz Chicken or Vegetable Broth
Olive Oil

Medium - Low heat on 10-12" Iron Skillet with enough Olive Oil to Brown Rice and Onion. Add 1/2 of the Garlic Powder and Black Pepper about half way thru the browning process the other half gets added as the Rice cooks. When the Rice and Onions are browned nicely transfer to a Dutch Oven with a lid. Add the amount of Broth you need to cook the Rice. About 5 mins before the Rice is done add the cooked Chicken and the rest of the Dry Ingredients.
