Mark's Mediterranean Chicken and Rice

Ingredients:
1/2 tbsp. Olive Oil
3 Stalks of Celery
1/2 Onion
1 1/2 Cups Cooked Jasmine Rice
1 Cooked Chicken Breast Chopped Fine
1 1/2 tsp. Black Pepper
1 tsp. Garlic
1/2 tsp. Cumin
2 tsp. Worcestershire Sauce
1/3 Can of Black Olives Chopped
1/2 Cup of the Juice From the Black Olives

This is all done with a covered pan to trap the steam. Heat oil in large saucepan, dump in Celery and Onion. Sprinkle with Pepper, Garlic, and Cumin, let this work on medium heat for 3-4 minutes. Stir in the chopped Olives and add juice, add the Chopped Chicken Breast, let this simmer another 15 minutes, adding water as needed. When the Celery is clear stir in the Worcestershire Sauce and Rice, adding water to reach your desired consistency. My wife says it's absolutely delicious.
