Mark's Dinner Rolls

Ingredients:
1/2 Cup White Rice Flour
1/4 Cup Potato Starch
1/2 Cup Brown Rice Flour
1/2 Cup Tapioca Starch
1/2 Cup Corn Starch
1/3 Cup Sorghum Flour
1 1/2 tsp Xanthan Gum
1 1/2 tbsp. Sugar
3/4 tsp Salt
2 Eggs
1/4 Olive Oil or Coconut Oil
1 Cup Warm Milk Mixed w/ 1/2 tbsp. Sugar Then 2 1/2 tsp Instant Dry Yeast

Pre-heat oven to 150, mix dry ingredients, put baking pan and dry ingredients into oven to warm (turn oven off). Let Yeast set in warm milk 6-7 minutes, let set another 2-3 minutes. While you are waiting mix in eggs and oil, then mix all folding for 2-3 minutes. Let rolls rise for 20-30 minutes in warm oven(should double). Once rolls have doubled, bake at 350 for 10-15 minutes. Put rolls on cooling rack about 5 minutes after removing from oven or the bottoms will get soggy.
